Southwestern Black Bean Salad 
Ingredients:
- 1 15.5 oz can black beans, rinsed and drained
- 9 oz frozen corn, thawed
- 1 tomato, chopped
- 1 small hass avocado, diced
- 1/4 cup red onion, chopped
- 1 scallion, chopped
- 1 lime, juice of
- 3 tbsp extra virgin olive oil
- 1 tbsp cilantro
- salt and fresh pepper
Directions: 
Combine beans, corn, tomato, onion, scallion,
cilantro, salt and pepper. Mix with lime juice and olive oil. Marinate
in the refrigerator 30 minutes. Add avocado before serving.
Peanut Butter Graham Cracker Squares (Mom's recipe) 
                
Preheat oven to 350 degrees
         
        Rectangle Pan (9 x 13), lined with 
foil
        
        1 stick of butter - melt in foil- lined 
pan in oven
        
        Evenly pour 1-1/2 cups Graham Cracker 
Crumbs
         
        Evenly pour 1 can of sweetened condensed 
milk (14 oz.)
        
        1 bag of peanut butter & milk 
chocolate chips (11 oz.) - spread evenly
         
        6 oz. of semi-sweet chocolate chips - 
spread evenly
         
        Bake at 350 degrees for 25-30 minutes - 
watch the edges so they don't burn/brown
        
        Cool in fridge & cut into 
squares
So easy and soooo yummy, if you have a sweet tooth!!

The bean salad looks EXACTLY like something I buy at Whole Foods (for $9-something a pound!) to put on my chicken and salads...SO yummy! Thanks for sharing the recipe. Now I can save some $$ !
